This pasta salad uses rotini pasta and is full of various delicious and colorful summer ingredients
Ingredients:
- 1 pound pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
- Parmesan cheese, grated (optional)
Instructions:
1. Cook the pasta according to package instructions until al dente, then drain and set aside.
2. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion and cook until the onion is translucent, about 5 minutes.
3. Add the zucchini, yellow squash, and red bell pepper to the skillet and cook for 5-7 minutes, or until the vegetables are tender.
4. Add the cherry tomatoes and cook for an additional 2-3 minutes, or until the tomatoes are slightly softened.
5. Stir in the cooked pasta and fresh basil, tossing to combine.
6. Season with salt and pepper to taste.
7. Serve hot, garnished with grated Parmesan cheese if desired.
